My father’s miki noodles

My favorite recipe is one that I have learned from my pops – Miki Noodles, the Ilocos way.

I have previously made a blog about ramen and how much i love eating ramen. My palate’s liking for soup and noodles is heavily influenced by my childhood where in i grew up enjoying my father’s cooking. And his specialty? Ilocano dishes particularly, Ilocos miki, sinanglaw and pakbet.

The Ilocos-style Miki noodles is a Filipino noodle soup primarily made with miki noodles (thick egg noodles), chicken stock, and annato powder (atsuete). The Ilocos-style miki is usually served with boiled egg and topped with bagnet or even chicharon. I remember my pops making his own noodles. It’s quite a tedious process that involves hand-preparing the noodles, rolling and cutting into thin flat strips, and dried in the open air.

As a child, we would often have our summer vacations ar my pops’ hometown in Ilocos where we are treated with these delicious Ilocano meals i guess that’s how I really came to love and enjoy miki, garlic longganisa and the like.

Through the years, I have been cooking my pops’miki noodles sans that part where the noodles are prepared freshly (hahaha). And since then, I have cooked it in various ways. You see, I like to experiment and modify. But of course the classic way of cooking it holds a special place in my heart and my tummy.

Thanks pops for rhis recipe pops. Missing you extra today especially that it is raining. You would often cook us this soup during rainy days. It truly is perfect for the rainy, cold weather in Baguio! It’s armth and comfort in a bowl!
