If you find yourself wandering the scenic trails of Camp John Hay, there is a new spot waiting to reward your morning trek: Hay Diner.

Located right beside the old Starbucks, Hay Diner occupies the space that once housed Cantinetta. While the pizza ovens are gone, they’ve been replaced by something arguably more soul-warming—the charm of an authentic, all-day American diner. Opening its doors as early as 7:00 AM, it’s the perfect sanctuary for early birds.

Generous Plates and Surprising Flavors
At first glance, the menu prices might give you a moment of pause. However, any “price intimidation” vanishes the moment the plates hit the table. The portions are incredibly generous, and the quality of the food more than justifies the cost.
We dove into the classics first. The Great American—classic waffles topped with airy whipped cream and a tangy blueberry compote—is a masterclass in breakfast simplicity. If you prefer a savory-sweet combo, the Chicken and Waffles is a must-order. The chicken is perfectly crispy, paired with a savory gravy that ties the dish together. A major perk? This dish comes with refillable brewed coffee if you’re dining before 9:00 AM.

The standout surprise, however, was the Chicken Parmesan Spaghetti. It’s rare to find pasta this well-executed in a diner setting; the noodles were perfectly al dente, tossed in an earthy, herby tomato sauce heavy with fresh basil. The chicken portion was massive, smothered in beautifully melted parmesan.

Sips and Scenery
The beverage program is equally solid. The Cappuccino is smooth and refined, but the Banoffee Latte is the real star for those who prefer an iced caffeine kick. It’s mercifully not over-sweet, allowing the flavors to shine through without being cloying.
The ambiance truly seals the deal. The interior leans into that nostalgic American diner aesthetic, but the al fresco area is where you want to be. Sitting outside, surrounded by the iconic John Hay greenery and the refreshing mountain breeze, turns a simple breakfast into a restorative experience.
Hay Diner is a welcome addition to Baguio’s culinary landscape. Whether you’re fueling up for a busy day or just want to linger over a second cup of coffee under the pines, it’s well worth the visit. I already have my eyes on the Cinnamon Roll Pancakes and Apple Pie for my next trip!
