Rebel Bakehouse, Baguio City, Philippines – imagine it to be curvaceous almost appearing sensual, and its upper crust vibrant, and crispy. And the aroma? Rich, sweet buttery, nutty and caramelized. Then you touch it and hold it… it’s light and flaky. You take your first bite, and the crust crackles and your taste buds start singing in delight. What a wonderful croissant experience! And its Rebel’s.

“Kwasan101”: A croissant is a laminated, yeast-leavened bakery product that has dough/roll-in fat layers creating a flaky, crispy texture. Croissants are part of the Viennoiserie or pastry category of baked goods alongside brioche and puff pastries.

About Rebel Bakehouse: Rebel is a relatively new cafe/ croissanterie in rhe City if Pines, Baguio. What started out as a small, home-based business catering mostly Baguio locals during the pandemic, it steadily made a buzz in social media the past 2 years until it was able to finally put up its own establishment

Inside Rebel Bakehouse

Rebel Bakehouse features an aesthetically industrial interior with an open (glass-walled) kitchen/baking area where customers can see how the croissants are meticulously made. The entire cafe have high ceiling, a spacious dining area (and parking space too!)

I used to have these croissants delivered to my home during the pandemic.

Even before Rebel opened its door to Baguio tourists and more locals, I have been ordering their croissants and have them delivered at home. I have tasted most of their croissants and each of these pastries have distinct taste and aesthetics. Of course I have my personal biases (aka favorites). Two of which are their very pretty (colorful) Strawberry and Cream croissant and their twice-baked almond croissant (has almond frangipane filling and topped with sliced almonds and dusted powdered sugar).

Other worth-trying flavors include their bicolor Valrhona Dulcey Pain Au Chocolat, and the Leche Flan Danish! Even their classic butter croissant makes a perfect pair ro their coffee. Rebel’s croissants are reminiscent of the French pastries I got to try in Paris and Axe-Les Thermes France a few years back – truly palatine-satisfying.

Even my baby Story is tempted to try Rebel’s croissant.

Also, I remember those times that I have been backpacking around EU, croissants are everywhere — in different flavors and sizes. They’ve become some of my favorite pastries together withe canelles. Eventually, I would end up almost always wanting to search for and try the best croissants in a certain city. That is why discovering Rebel Bakehouse’s croissants during the height of the pandemic was such a treat.

Chai Tea Latte x Iced Cereal Milk

For their drinks, I have so far tried their iced cereal milk and chai tea latte – both of which perfectly matches any of their croissants. They also offer some rice meals which I yet have to try. So that’s another reason to pay them another visit one of these days.

UPDATE: Rebel just opened their CBD branch this April 2025 and it is conveniently and beautifully kocared beside the Baguio Cathedral.
